Most liquid calcium products I encounter are a solution of dissolved calcium chloride, with a density around 11 lbs/gallon and a calcium analysis of 10 by weight. Brewfather recommend 6.5ml to hit the same ph and at 4.5ml predicted 5.50ph. Next batch I went with Brunwater for 4.5ml to target 5.35. Measured the mash and it was at 4.62! Loaded up Brunwater and it said 10ml would give 4.6 ph. The first one brewfather said I'd need 10ml of latic to get to 5.25 ph. I just bought a pH meter and I've brewed two batches where I checked my mash pH. I started doing campden and water chem and the bitter went away and got about a 10% efficiency boost. I got my water report and Brunwater predicted a mash pH of around 6.0 if I didn't acidify. While it was still good beer I got a wierd bitter bite in the aftertaste and lower mash efficiency than I wanted. My first few all grain batches I didn't do any water chem. I use 88% latic acid to bring my mash pH down into the 5.3 range. Treat with 1/2 a campden tablet along with whatever amounts of gypsum or calcium chloride I decided for the recipe.
